Acclaimed Welsh Chef Bryn Williams brings his passion for seasonal, sustainable local produce to our new restaurant in the heart of Theatr Clwyd.

From relaxed breakfasts, lunches and afternoon tea to elegant evening dining - make your visit an experience to remember. Bryn Williams at Theatr Clwyd, has been designed to fit perfectly into the iconic newly refurbished Theatr Clwyd.

Theatr Clwyd is a registered charity (1189857). Trading income from Bryn Williams at Theatr Clwyd helps support Theatr Clwyd's theatre and community programmes.


Our Restaurant

Set on the first floor overlooking the stunning Clwydian range, our modern Welsh bistro is where French cooking meets Welsh ingredients. Our light filled space, with its informal dining atmosphere will be using the very best local ingredients, with meat & vegetables taking centre stage. It is open throughout the day for breakfast, lunch and dinner.

Our Café

Set on the ground floor, our friendly, welcoming cafe serves a range of freshly-made salads, sandwiches and cakes, alongside barista coffee. Our café is a dog-friendly space, with close access to our family play area and is the perfect meeting place for colleagues, friends or family.

About Bryn Williams

Hailing from just a few miles from the heart of Theatr Clwyd, Denbigh born Bryn Williams is a talented Welsh Chef who has made a significant mark on the culinary world.

Bryn learnt to appreciate food and its origins from an early age. Born into a farming family he developed a respect for food whilst growing vegetables, fishing, and managing game on his uncle’s farm.

He has been employed in some of the most prestigious kitchens in London. Working under Marco Pierre White at The Criterion, Michel Roux at Le Gavroche, and as senior-sous at The Orrery. Bryn was the patron of Odette’s in Primrose Hill for 16 years until he sold for pastures new in 2024.

Bryn also is at Porth Eirias, Colwyn Bay, a beach-front Restaurant, Café & Bar on the North Wales Coast. He opened his third restaurant in 2020 at ‘The Cambrian’ hotel in the stunning Swiss Alps. The latest venue is ‘The Touring Club’ in Penarth, Cardiff.

Both Porth Eirias and the Touring Club have been awarded the prestigious Michelin Bib Gourmand.

Bryn is extremely excited to have the opportunity to bring his creativity and brilliantly curated menus to Theatr Clwyd where seasonality, creativity, sustainability, and a passion to use local produce and champion the varied and quality larder North Wales has to offer are key elements of the way Bryn delivers his food.
